Marinated Tuna with Arugula and Cherry Tomatoes

Abstract: Recently featured in Cooking with Nunzio's Spring cooking series, this sicilian dish is the perfect appetizer. Easy to make and absolutely delicious! Try it out and post your comments.

Cooking with Nunzio, Sicily

Marinated Tuna with Arugula and Cherry Tomatoes
Recipe by Chef Nunzio Patruno

Serves 10

Ingredients:

1 lb. of tuna, center cut is best
1 tablespoon of black pepper
3 bunches of baby arugula, cleaned & washed
1 pint of cherry tomatoes, sliced in half
2 ounces of roasted pine nuts

Marinade:

1 garlic clove, finely chopped
1 sprig of fresh mint, finely chopped
juice of two lemons
2 ounces of extra virgin olive oil
1 tablespoon of capers
1 teaspoon of mustard
salt & pepper


Instructions:

Cut the tuna into 3 inch by 3 inch blocks and season with black pepper and salt.  Grill or saute for 2 minutes on both sides keeping the tuna rare. Set aside.

In a bowl mix together all the marinade ingredients and set aside.  On a serving tray place the arugula on the bottom.  Then, thinly slice the tuna with a very sharp knife or electric knife.  Place the sliced tuna on top of the bed of arugula and drizzle the dressing on top.  Add the tomatoes and sprinkle with pine nuts.  Let the dish marinade for 15 minutes before serving.
