Apple Almond Tatin Dessert
Recipe by Chef Nunzio Patruno
Serves 6
Ingredients:
6 apples, peeled and quartered
3 ounces of sugar
3 egg whites
3 ounces of almond flour
3 ounces of pastry flour
3 ounces of melted butter
½ teaspoon of baking soda
½ teaspoon of cinnamon
5 ounces of sugar
2 tablespoons of water
3 ounces of roasted almonds
6 ramekins, 5” x 1” size
Caramel Sauce:
5 ounces of sugar
3 tablespoons of water
2 ounces of heavy cream
Instructions:
Pre-heat oven at 375 degrees
In a mixing bowl mix together the egg whites, sugar, almond flour, pastry flour, cinnamon, baking soda and melted butter. Whisk together until smooth and set the almond paste aside.
In a small pan add 5 ounces of sugar and 2 tablespoons of water. Cook the sugar on medium heat until it caramelizes into a medium brown color. Then, spoon the caramel into 6 ramekins and place the sliced apples on top of the caramel. Cover the apples with one tablespoon of almond paste. Bake for ten minutes at 375 degrees. Set aside. To make the Caramel Sauce, in a small pot add 5 ounces of sugar and 2 tablespoons of water and cook until it caramelizes. Then add the heavy cream. Simmer for 2 minutes and set aside.
Finally, un-mold the apple tartin onto a plate and add one scoop of vanilla ice cream. Drizzle over the dessert the caramel sauce and decorate with shaved roasted almonds. Serve.
